SCD Creamy Baked Apples



Creamy Baked Apples

I found these apples really satisfying, like a warm bowl of oatmeal.

1 Apple, any kind
1T. honey
5 T. coconut milk
1/4 tsp. cinnamon
nuts (optional)

Cut apple in half and core, you can peel and cube if you like. Place in a glass baking dish skin side down. Cover with honey, coconut milk and cinnamon. Sprinkle nuts over the top. Bake 1 hour at 350 degrees. Let cool 10 minutes. Drizzle with juices when serving.

For a lighter, less creamy version substitute 1 T. lemon juice and 4 T. water for the coconut milk.
