How to Make Yocheese or Dripped Yogurt


Yocheese is a sour cream and cream cheese substitute made from yogurt. It adds texture and flavor to baked goods, salad dressings, dips and even scrambled eggs.

I use the Cuisipro Donvier cheese maker. Pour yogurt in the strainer basket, put on the seal and refrigerate it. 24 hours later you dump out the liquid and have yocheese.

Another method is to layer 2 coffee filters in a strainer, fill with yogurt and cover with plastic wrap. Set the strainer over a bowl in the refrigerator for 24 hours. Again, drain the liquid and remove the cheese from the filters.

Both ways make equally good cheese, the Cusipro maker is easier to store in the refrigerator and won't spill if it gets bumped, it is also dishwasher safe.
