I saw this recipe in a recent edition of Diet and Nutrition. I adapted it of course and it is very good, very rich and creamy.
1 recipe Tangy Lemon Curd from The Nourishing Gourmet, chilled
1 recipe SCD Whipped Cream, whipped to stiff peaks
Fresh fruit of your choice
Combine equal parts curd and whipped cream (save some whipped cream for topping). Gently fold together and place in custard cups or parfait glasses. Top with fruit and more whipped cream.
