For the cake and cupcakes I used Elana's recipe here. I substituted coconut oil for the grapeseed oil and honey for the agave.
For some reason I can never get Elana's chocolate frosting to turn out. I have tried it twice with terrible results. I found this ganache recipe and whipped it for the frosting. It is very rich and really good with the coconut oil to give it a background coconut flavor. These two recipes go great together and make sure to refrigerate any leftovers then bring to room temperature before serving.
