SCD Hamburger Helper


It is true what they say, necessity is the mother of invention. I put this together in under 10 minutes the other night because I was famished and not able to eat what I had prepared for my family. A quick look around the kitchen and it all came together, it was so good I immediately bought more ingredients to make it again a few nights later.

SCD Hamburger Helper

1 lb. hamburger
1-2 zucchini, cut into rounds and then halved
1/4 c. diced red bell pepper
garlic (either the powder or minced)
salt and pepper
2 T. dried parsley
1-2 small cans tomatoes or tomato sauce (check the ingredients to make sure it is legal)
Your favorite cheese, shredded (optional)

Brown the hamburger, seasoning with garlic, salt and pepper, drain well. Add the bell peppers and zucchini, stirring occasionally. Cook 3-5 minutes until zucchini is bright and softened. Add more garlic, salt and pepper, parsley and tomatoes or sauce. Cook till heated through. Top with shredded cheese and serve.
