Chicken Salad Lettuce Wraps


This is an easy meal to put together and travels well if you pack the chicken salad separate from the lettuce leaves and assemble just before eating.

2-3 c. cooked, chopped chicken meat
1 T. dried parsley flakes
salt and pepper to taste
1 celery rib finely chopped
4-6 T. homemade mayonnaise , you can sub purchased mayonnaise but you are missing out!
6 Organic Romaine lettuce leaves, washed and rolled up in paper towels till ready to use.

Combine all ingredients except lettuce leaves. The consistency of the salad is determined by how finely the chicken is chopped and how much mayo you use. Play with it until you get it how you want it. Place salad on lettuce leaves and garnish with tomato or cucumber slices.
