Bacon Summer Veggie Soup, Recipe Review

It has been hard for me to find a satisfying soup with no grains, dairy or potatoes. I really like those thick creamy soups with tons of cheese and potatoes.

This soup from Nourishing Days is so full of flavor I didn't miss a thing. I walked out to my garden and found carrots, thyme, zucchini and green onions to go into it, I think some bell pepper would be nice too. This soup will become a regular at my house. I topped it with a dallop of 1/2 and 1/2 "sour cream" and it was wonderful.

How can you go wrong with fresh thyme, garlic, bacon and lemon? Thanks again Nourishing Days for another great recipe.
