When life gets crazy and I have no time (or am too tired) to cook for myself I eat my version of fast food. This simple and healing chicken soup I try to always have on hand in the freezer, it is portable and I can heat up a jar in less than 4 minutes. I have been known to eat it for breakfast, lunch or dinner. It is also the best thing for my digestion when I have accidentally ingested some gluten, it soothes my system.
Healing Chicken Soup
Ingredients:
1 3-4 lb organic chicken, whole (this farm is a great resource if you live close)
filtered or spring water
salt and pepper
2 zucchini
2 carrots
1 small onion
Method:
1. Rinse the chicken in cool water, pat dry. Liberally season with salt and pepper inside and out and place in a crock pot.
2. Slice the zucchini, carrots and onion thinly and place around chicken.
3. Fill the crock pot to within 1 inch of the top with water.
4. Cook on low for 12 hours.
5. Remove chicken to a platter and let cool for 15 minutes. De bone the chicken returning all meat to the crock pot.
6. Adjust seasonings and serve immediately or freeze to have on hand.

I didn't know you could freeze glass jars. That's handy.
ReplyDeleteMrs. Ed glass jars are so versatile! The come in all kinds of sizes, you can freeze and even bake in them, then toss them in the dishwasher. I have thought about doing a post just about glass jars in the past:) Just be sure to leave an inch or two when freezing for the contents to expand.
ReplyDeleteI actually leave about 2 inches, I've had some with 1 inch space still expand too much and crack!
ReplyDeleteI do this too, always keep broth on hand for "fast food" dinners. Eggs also make good quick meals.
Karen, I do the same thing with my chicken soup! Nothing soothes the body or soul like chicken soup!
ReplyDeleteHow do you thaw it in glass jars? I'm afraid they'll break.
ReplyDeleteI was afraid of that too, I used to sit the jar in a bowl of warm water for a few minutes then dump the soup into a bowl to continue heating. Now I take off the lid and put the entire jar into the microwave on high.I have never had one break.
