Homemade Yogurt, SCD style
I cannot eat dairy products but after reading Breaking the Vicious Cycle I tried the yogurt suggested for the SCD diet and I haven't had any problems. The idea is that you cook or ferment it for 24 hours, thus all the sugar in the milk is used by the bacteria for food and it is 100% lactose free when made this way, unlike any store bought yogurt. It is very tart so I add lots of honey but it is a welcome addition to smoothies and other recipes.
Homemade Yogurt, SCD style
4 c. milk (I use 2% but you can also use whole)
1 packet (5g) Yogourmet yogurt starter
Heat the milk in a large pan or stockpot. Watch it closely and remove from heat once it reaches 180 degrees or just starts to simmer. Cool to lukewarm. Mix 1 c. of the heated milk with the yogurt starter in the container from your yogurt maker. Add the rest of the milk and stir well. Place in yogurt maker and cook for 24 hours. It should be thick when done cooking and will thicken more as it cools. Store in the refrigerator for at least 3 hours before serving.
I have the Salton yogurt maker and really do like it. My only complaint is that it does not make a bigger batch. I make about 2 batches a week. The reason I purchased it is because it holds a quart sized jar so I can use glass instead of plastic and have as many jars as I need without purchasing something from the manufacturer.
Note: I did try making yogurt in a quart glass jar, the wide mouth kind fits perfectly and worked out great.
Hi Karen, thanks for the yogurt post. I have some on the go right now. Looking forward to it! Have you heard all the amazing things about Acai (pronounced ah-sah-ee)? It is a fruit berry from the amazon, made into a juice. Very high in a number of amino acids, and anti-oxidents. Reportedly good for the digestion, boosts ones energy level, good for overall health. I bought a bottle at Costco of all places, the directions say to shake and take 2 tblsp. with a meal each day. I am super sensitive, so never take the required amount - just 1 tblsp. Have taken it for 3 days now, and honestly, I feel better. More energy, but feels natural, no bloating or digestion issues. And it tastes good! I wanted to try it before recommending it to anyone, but have to say, so far I really like it! It is also reputed to be anti-aging as well. I too, do my own yoga practice, not teaching at the moment, but between yoga, gf diet, and the Acai can say this is the best I have felt! Thanks for your bolg - really enjoy it! While I was gifted a hand-me-down yogourmet, and have used it, I am very happy making the yogurt in the oven. I mention this bec you wrote you'd like to make more at a time. Me too! I have a GALLON fermenting now. I actually made it in two batches, just how the timing went. so I will have one batch done tomorrow afternoon, and one at 10PM.
I put a thermometer probe into a jar of yogurt in the oven, and have the reader outside. Every time I walk by I see that the temp is at a constant 100 degrees.
And of course, can use any and all jars.
Before reading about using the lightbulb-in-oven, I was going to get a Yolife yogurt maker. Very neat design: it comes w jars, but can use your own and I think it goes up to a half gallon. I suggested it and Digestive Wellness now carries it.
