Change; The Only Constant
Have you had this experience yet? You walk into the grocery store, the scent of freshly baking bread steaming right out of the oven.....makes you want to gag? I went to lunch the other day with some friends to a restaurant that specializes in freshly baked rolls. A roll came with my salad and as I was politely declining the roll my friend said, "oh, she wants it" and proceeded to put one on my plate (this was of course so she could eat it). I could hardly stand it! I wanted that gluten filled toxic roll off my plate, I was afraid it might touch my salad. Sounds a little crazy, maybe a little extreme, but as I am approaching my 2 year anniversary of being gluten free I have found my views and tastes have changed.
I thought I would always have these cravings for gluten filled goodness. Cinnamon rolls and dinner rolls especially. Not true. I don't even want it, especially anything with wheat or high amounts of sugar. It just doesn't sound good and this has really taken me by surprise. So if you are struggling, wondering if it ever gets any better, embrace the changes you need to make and look forward to the future. It does get easier. Our bodies know what is best for them and the head cravings do go away. Now if I could just figure out how to quit craving whipped cream!
Hello, I am a new reader. I like your site. Spouse has been SCD for over 2 years. It isn't so bad. Yes, I do get my gluten when he's away or I'm away, but still - contrary to the horrified reactions of others - I don't miss pasta/bread, etc. that much anymore.
ReplyDeleteNow, not that this is for you. I did see you cheat sometimes (cocoa). Well the spouse, he never cheats. Well one day I was reading about another SCDer who occasionally does this, and he thought he'd try since he been symptom free for so long. I read that heavy cream is virtually lactose free as it is. So one day, I whipped some up for him with a little SCD vanilla, honey and cinnamon, to go with his SCD pumpkin pie. It was so good, and he now, occasionally, will have this with no problems - not even a stomach rumble.
Also, I have a good recipe for SCD cinnamon rolls....
Thanks for the great comment! It does seem as your body heals you can afford a "cheat" now and then. I love that you eat this way with your husband, true love! SCD cinnamon rolls, is there such a thing, OK, now maybe I will crave them! Please, please, please send me the recipe!

Ok! More true laziness. Why make two meals when I cook great SCD food these days? We eat really well. I've adapted so many recipes I can't even think what we don't have that I miss. Except chicken pot pie. I can't make that work. When I found cauliflower rice, that was all I needed.

Topping
1/2 C butter
1/2 C honey
3/4 C chopped pecans
Dough
1/4 C melted butter
1/4 C honey
3 eggs
1/4 tsp white vinegar
1/2 tsp baking soda
1/4 tsp salt
3 C almond flour
Spice Mix
1/2 C almond flour
Scads of cinnamon (I have NO idea how much)
Generously butter a 9" round cake pan and line the bottom with parchment paper. Melt 1/2 C butter and 1/2 C honey in a small pan. Bring to a boil and cook for 5 minutes or until a candy thermometer reads 249 degrees. Pour into cake pan and sprinkle pecans over caramel.
In a small bowl, combine ingredients for spice mixture and set aside.
In a medium bowl, combined dough ingredients. Dough will be stiff. Drop by heaping tablespoons (I use a cookie scoop) into your WET hand and roll into a ball. Roll the dough into the spice mixture, and place on caramel mixture. When you are done, flatten just a bit.
Bake at 325 degrees for 30 minutes or until a toothpick comes out clean and the center seems firm. Loosen the edges and invert onto a serving place. Cool to room temperature and serve.
