GFCF Banana Nut Pancakes




Gluten Free Casein Free Banana Nut Pancakes

1 ripe banana
2 eggs
1 tsp. honey
pinch of salt
1/4 tsp. baking powder
1 T. arrowroot starch (omit to make SCD Legal)
3/4 c. almond flour

coconut oil for cooking

Peel and mash the banana with a fork in a medium sized bowl until smooth and creamy. Add the eggs and continue to mix with the fork till all ingredients are thoroughly combined. Add the rest of the ingredients and stir with a spoon until there are no lumps.

Heat a heavy frying pan on low, melt 1 T. coconut oil in the pan. When it is hot add 3 T. pancake batter, spreading it out until it is evenly distributed in a circle. Cook on low until a few bubbles have formed then flip over. These pancakes are a little tricky at first. Add more oil after every few pancakes, they are easiest made small so they can cook thoroughly without burning.

Serve with Earth Balance margarine and your favorite real maple syrup or jam.
