Lauren's SCD Peanut Butter Cookies


SCD Peanut Butter Cookies

2 1/2 c. blanched almond flour
1/4 tsp. baking soda
1/4 tsp. salt (omit if peanut butter is salted)
heaping 1/2 c. peanut butter
1 Tbsp. vanilla extract
1/2 c. honey
1 egg

Combine all ingredients in a medium sized bowl. Stir till well combined. Drop teaspoon sized balls onto a parchment lined cookie sheet. If desired cross each cookie with tines of a fork. Bake at 325 degrees for 6-7 minutes.


Note: Thanks to a reader's comment I think these are much better with an egg added. Love those comments!

  1. Hi from the Westcoast, B.C.! I forgot the other day to ask, do you ever make yogurt cheese? It is wonderful, and so versatile! All you do is place a coffee filter in a sieve, place the sieve over a bowl, pour in the yogurt, cover with plastic, and refridgerate 24 hours. All the liquid is now in the bottom of the bowl and you are left with wonderful thickend yogurt cheese! Great in dips, spreads, used in anything that calls for sour cream, or cream cheese! So yummy! A great alternative for people that can't have sour cream or cream cheese!

    I haven't begun having any dairy yet. My first batch of yogurt is cooking right as I type. I am really nervous about trying some, as I haven't tolerated dairy at all in the past. I am ready to go to make some cheese, I read it was better to start out with the cheese than the yogurt. Wish me luck!

  3. I made these about a yr. ago, but they didn't seem to hold together well. Have you ever tried scd's peanut butter brownies? They are delicious!

  5. Just made these tonight. Reading previous posts, I added one egg to help bind. Also cooked much longer than the 7 minutes listed. Kept adding 3min segments and re-checking. Made small fork holes in middle to help middle cook (found it was staying "raw" while the outside of cookie was browning). End result was a great cookie!

  7. I rarely post comments, but had to on these! I'm not a massive peanut butter fan, but made these nonetheless and they are great! So simple - just mix them up in the bowl - I did need to double the cooking time in my oven. They taste lovely and are CRUNCHY - on the SCD CRUNCH is what I miss big time :-) Thank you!
