These cookies are not legal because of the chocolate, if you read my blog much you know I am not opposed to to cheating once in awhile, especially when it comes to chocolate. Anyway I did substitute honey for the agave, cut the salt in half and added some chunky pecans. I used
Enjoy Life's Chocolate chips because they are gluten and dairy free. They tasted even better the next day.

I love Elana's Pantry! I've been able to adapt many of her recipes to SCD. I have a story about this cookie recipe. One time we decided to let our son cheat on his diet for the sake of a school carnival. So I made this recipe and donated it to the carnival snack bar. (I used honey but the chocolate was still a cheat) I was thinking this way our child could have a cookie from the carnival snack bar, since he usually can't have stuff like that. Well, they were sold out when we got there, and I had made a triple batch!

Oh Tracee, that is so funny! I too have found that when people are not expecting anything different they love SCD food. Where do you find Macademia oil? I love the flavor of the nuts and I think it would really add to the cookies. Thanks for reading!
ReplyDeleteI find Macademia oil at the health food store, but stores that like to carry gourmet items will usually have some as well, I think here in Texas, H.E.B. might have it. Whole Foods or Central Market might as well.
