My family was having mashed potatoes the other night, and they looked really good. I had a butternut squash in the refrigerator and decided to make some "mock" mashed potatoes for myself. I think they turned out really good, lots of flavor and the mashed texture of the potatoes.
I cooked the squash just like the "How To" I posted here on Spaghetti Squash. Then I scooped all the flesh out of the shell and into a bowl. I added some SCD cream (unwhipped), salt and honey then mashed the heck out of it with a fork. If you are eating butter I think I would leave out the cream and use butter instead. WOW!
