Carrot Cake with Orange Glaze

This carrot cake comes from Elana's Pantry, my very favorite blog. I cut the recipe in half and made it in a glass pie plate. I made an orange glaze instead of frosting and served it with whipped cream.

to make SCD legal use honey instead of Agave.

For the glaze, combine 1/3 c. orange juice and 1/3 c. honey. Simmer for 5 minutes. Remove from heat and add a squirt of lemon juice and 1 tsp. vanilla, stir and let sit until ready to use. Once the cake has cooled poke holes in it with a fork. Pour glaze over the top and let sit at least 2 hours. Serve with whipped cream and store the leftovers in the refrigerator.
