This is really the combination of two previously posted recipes. Summer Squash Noodles and Quick SCD Low Carb Spaghetti. I love these zucchini noodles, I have an abundance of zucchini in my garden and they are so easy and flavorful. Make sure you dry the noodles thoroughly, it makes all the difference in texture. I sliced the noodles then dried them all afternoon on the counter. To cook them I sauteed them for only a few minutes in olive oil with a small amount of garlic and a sprinkle of salt. I served them with the sauce from the Low Carb Spaghetti post and Parmesan cheese.
