Cream of Broccoli Soup



I love creamy soups, really love them. I have had to give them up since going dairy free 2 years ago. Lately I have found I can have cultured dairy products and have been making up for lost time with SCD Whipped Cream, here I used it in soup and it turned out great. If you can have dairy by all means use whipping cream or half and half. If you can't have dairy and don't want to wait to make the cultured cream try full fat coconut milk. This recipe was inspired by This Primal Life Blog, there is a great master recipe posted there. I am going to try it with butternut squash next.

SCD Cream of Broccoli Soup

3 c. broccoli florets cleaned and trimmed
1 onion
1 T. coconut or olive oil
1 tsp. garlic puree
3 c. chicken stock (check out this recipe and information)
1/4 c. SCD Whipped Cream unwhipped (use 1/2 c. if you are using half and half or coconut milk)
salt, pepper
1/4 tsp. nutmeg

Saute the onion with the oil in a covered stock pot, 5-10 minutes. Add the garlic, broccoli and broth. Bring to a boil and reduce heat, cover and cook 10 minutes. Using an immersion blender puree the soup. You could also use a blender but cool the soup first. Add cream and seasonings. Re-heat and enjoy.
