I recently purchased a huge bag of organic carrots in a fit of delirium. Now I am frantically looking for ways to use them up. I did an online search for SCD carrot cake and found This Primal Life. What a great blog.
I made a few changes to the recipe:
1. For the baking powder I substituted 3/4 tsp. baking soda and 2 tsp. lemon juice.
2. I used only 1/2 c. coconut.
3. I subbed honey for the maple syrup.
4. I used an 8x8 inch pan.
5. I did not make the frosting.
The cake is moist and rich. This is one recipe I will make over and over again. Click here for the recipe.
