Gourmet Scrambled Eggs

Gourmet Scrambled Eggs

4 eggs
1/4 tsp. salt
1/4 c. yocheese
fresh chives
2 T. olive oil

1. Heat the olive oil in a heavy skillet over medium heat.
2. Whisk the eggs with the salt and yocheese till fluffy.
3. Using kitchen sheers snip approximately 3 T. chives in with eggs.
4. Add egg mixture all at once to heated oil. Cook till done, stirring occasionally.
5. Serve hot, adding more snipped chives for garnish.
6. Serves 2
