Summer Veggies



This isn't really a recipe as much as an idea. Take whatever veggies you have and cut them into bite sized pieces. Saute in olive oil. Add garlic, salt and chopped fresh parsley. You could even add some chicken and make it a meal. A great way to use up the odds and ends at the end of the week. For the dish pictured I used yellow squash, Anaheim pepper, red bell pepper and Italian Parsley. I served it with SCD Meatloaf and it made a delicious meal.
