SCD Meatloaf for the Family
2 lbs lean hamburger
3 eggs
1/2 c. tomato juice or water
3/4 c. SCD Breadcrumbs or almond flour
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1 tsp. dried parsley flakes
1/4 tsp. onion powder
1 small can tomato sauce for garnish
In a large bowl soak breadcrumbs or flour in tomato juice or water for 5 minutes. Add all other ingredients except the tomato sauce. Mix well with your hands (I wear latex gloves when doing this). Divide mixture in half, pick up each half and drop it back into the bowl several times (this gets all the air out). Shape into loaves and place in a baking pan. Bake at 350 degrees for 1 hour or until no longer pink in the middle. Remove from oven, top with tomato sauce and let sit for 10 minutes before cutting and serving.
