Creamy Butternut Squash

Lately things have been very hectic and I haven't had much time to cook. I have a garage full of squash so I have been baking one up for lunch each day. It is easy, flavorful and nutritious.

1 butternut squash baked, follow these directions
1/3 c. coconut milk
salt

Scoop the cooked squash into a large bowl. Mash with a fork or potato masher till smooth. Add milk and salt to taste. Stir well.
