Chicken Lime Mexican Soup


This recipe reminds me of the soup at Cafe Rio, a Mexican Grill we love!

Chicken Lime Mexican Soup

1 small onion, diced
1 heaping tsp. garlic puree
1 T. oil
1-2 chicken breasts, cut into 1 inch cubes
4 c. chicken stock
1 can diced tomatoes with added onion and garlic, drained (if you can't find them just use plain)
2 tsp. cumin
1/2 tsp. paprika
dash cayenne
1/2-1 c. navy or black beans
salt and pepper to taste
juice of 1 lime

Heat oil in a large stock pot. Add onion and garlic with a little salt and pepper. Simmer over low for 5 minutes or until onion softens. Add chicken and DRAINED tomatoes. Stir till heated through. Add spices, broth, and beans, bring to a boil and simmer for 10-20 minutes. Remove from heat and add lime juice and adjust seasonings. Serve with suggested garnish.

Garnish: tortilla strips or chips, avacado, chopped cilantro, shredded cheddar cheese, green onion
