Creamy Raw Feta Chive Dressing




Note: Feta cheese is not allowed on the SCD

Lately I have been experimenting with raw dairy products. In the beginning of the SCD I couldn't even tolerate the homemade yogurt. Over a year later I can have as much yogurt as I want, but cheese is another story. I still get sick when I eat more than a few bites of cheese. Talking with a friend she suggested I try raw cheese as the enzymes have not been destroyed through the heating process and for some people it is easier to digest. I found some raw dairy milk and cheese at Real Foods in Heber City. I have had no problems with the cheddar and jalepeno cheddar so this last week I purchased some raw goat feta to try. The first recipe I tried was this salad dressing, I am in love! Creamy and so flavorful and just in time for the garden greens to be harvested.

Creamy Raw Feta Chive Dressing

Ingredients:
1/4 c. Raw Feta Cheese
2 T. white wine vinegar
3 T. fresh chives, snipped into small pieces
2 T. water
1/3 c. olive oil
Salt and Pepper to taste

Method:
1. Mash the feta with a fork until it is smooth.
2. Place all ingredients into a small jar along with the feta and shake.
3. Serve over your favorite salad greens.

  1. That looks so good! I have been wanting to make my own goat cheese, but have not found raw cheese anywhere! Its wonderful to hear the SCD diet has worked so well for you. Ina

  2. I love your blog! I thought feta was advanced and for occasional use--just checking with you. It's rare for me but I like it on a salad. This recipe looks great ;-).

  3. This looks great. Occasionally I can find a goat feta that has been aged for 60 days and my little boy will just eat it straight. I think I will try to get some raw cheese.
    I do think there might be something to the raw cheese thing, at least for some. When I was in France for a semester in college, I gorged myself on the cheeses, which is not pasturized and full of good bacteria. I had a remission of my mysterious autoimmune symptoms. I knew nothing about the role of food and gut flora in my health condition. So I just assumed that maybe there was something in the air in the US, that wasn't pollinating in France, that was causing it!! We are just kept so ignorant on these things. When I got back to the US I got horrifically constipated and my symptoms returned. My doctor said he noticed alot of folks get constipated when they came home after long trips abroad and he then said "There must be something constipating about the American diet". I remember thinking how odd, I had filled up on cheese and hadn't had any wheat or bran cereal, that just didn't agree with what the experts were saying so I dismissed it. Gee...now I know (I just wish I knew then).
