Recipe Review: Wendy's Cinnamon Rolls




One of my favorite things about this blog is the great people I have met through it. Wendy left a comment here with this enticing recipe. Wendy if you are out there let me know if you have a blog or a website I can link to. She also promised a recipe called Chile-Jack Chicken.........

If you are craving a sweet-gooey dessert this recipe will have you doing cartwheels! It was just like eating sticky buns in the old days......Thanks Wendy!

Topping
1/2 C butter
1/2 C honey
3/4 C chopped pecans

Dough
1/4 C melted butter
1/4 C honey
3 eggs
1/4 tsp white vinegar
1/2 tsp baking soda
1/4 tsp salt
3 C almond flour

Spice Mix
1/2 C almond flour
Scads of cinnamon (I used 1 Tablespoon)

Generously butter a 9" round cake pan and line the bottom with parchment paper. Melt 1/2 C butter and 1/2 C honey in a small pan. Bring to a boil and cook for 5 minutes or until a candy thermometer reads 249 degrees. Pour into cake pan and sprinkle pecans over caramel.

In a small bowl, combine ingredients for spice mixture and set aside.

In a medium bowl, combined dough ingredients. Dough will be stiff. Drop by heaping tablespoons (I use a cookie scoop) into your WET hand and roll into a ball. Roll the dough into the spice mixture, and place on caramel mixture. When you are done, flatten just a bit.

Bake at 325 degrees for 30 minutes or until a toothpick comes out clean and the center seems firm. Loosen the edges and invert onto a serving place. Cool to room temperature and serve.

  1. I would like to point out that I didn't create this recipe, it was sent to me by my aunt with celiac. And I'm not sure where she got it. I just tweaked it to work for me. But it is good, isn't it?

  2. Hi there! I happened to stumble across your blog last night while trying to come up with some good scd desserts. Our family has been on the diet since December, and I have seen such tremendous benefits from it! I have been feel so discouraged lately because I feel like we're in such a rut: scrambled eggs and smoothies for breakfast, hamburgers for lunch, chicken and veggies for dinner, almond butter brownines for dessert. Ack! Will someone please save me from the monotony!? And i can't even have a pizza delivered.

    What a horrible, whiny baby I've been for a diet that has helped my children SO incredibly! How could I even be tempted to give up when we've seen such tremendous benefits!? Anyway, your blog has given me such inspiration, and such a well needed burst of enthusiasm.

    We made these cinnamon rolls for breakfast. iNCREDIBLE! They were so yummy. I can't wait to try more stuff from your blog!

  4. Could you please identify what the spice mix is you are using. It doesn't say anywhere, but I am sure it makes a huge difference to the final product. Thank you. JoAnne PS. It sounds like a great recipe - I'm ready to make it as soon as I know how to make the spice mix.

  5. Sorry about the confusion, the spice mix is made up of the almond flour and cinnamon, I realized looking at this it is confusing. I will highlight it somehow so it makes more sense next time. Enjoy this recipe it is really good!

  7. I used to make cinnamon rolls from scratch for Easter and was bummed this year that I wouldn't be able to do that now that I am on the SCD, but I am bummed no longer! I found this recipe and made the rolls - they were SOOOO good (and much easier than my mom's)! I can't get enough of them. Thank you so much for posting this; I honestly don't know what people on the SCD did before the internet came along.

  9. I dont know what I did wrong. These were not good at all to me. I used coconut oil instead of butter, could that explain it? My batter was very sticky also.

  10. Christian, sorry this recipe didn't turn out for you. If you can't use butter try subbing 1/2 ghee and 1/2 coconut oil. Your really need the butter flavor to make this recipe. Good Luck!

  11. Hi! My girlfriend has made these for me a bunch of times and they are AWESOME! However, I tried making them this weekend, and they seemed really heavy, and a little too dense. Any suggestions??? THANKS!
