The chicks are getting their wing feathers, teenage chicks now. They are eating a ton, I have almost been through 25 lbs of food in 2 weeks!

Dinner- Hamburgers on the outdoor grill with Funeral Zucchini

Dinner- Taco Salad, tacos for the family

Monday:

I am changing my menu schedule to run Thursday through Wednesday so I can better take advantage of items on sale and incorporate them in my menu. Here are this weeks yummy meals...

A Word About Menus...


A word about menus....it may seem a little stuffy and uptight to plan your meals a week ahead of time but if you use it right it makes life even more flexible. I look at the menu as a foundation, not really knowing what the week might bring, it is there to be changed if needed but I always know I have the ingredients for 7 healthy meals that week. I would guess we stick to the planned meal only 80% of the time (which is why you may have noticed so many repeats in my menus).

Sometimes we have scheduling issues or just want something different. Example; last week my husband asked for spaghetti one night, I didn't have this on the menu but it was easy to postpone another meal and make the one he wanted. I now have a meal from last week we didn't eat that I can use this week. Another example is that we have been trying to take a weekend trip for 3 weeks and the trip kept getting postponed. I had the meals planned so that if we didn't I was ready to keep on cooking dinners, if we did go I would use those meals as soon as we got back (and not have to run to the store). This method works for me and my family's sometimes chaotic schedule, I never know for sure how the day will go. Give it a try, even planning 3 meals in advance and shopping for them is a time saver. It is nice to know what is for dinner instead of the frantic 5:00 rush of trying to find something for dinner.

Here is a menu planner from Nourishing Days, I really like that she has room for preparation reminders. Print one out and take it with you, fill it in during your spare moments today and get in the menu habit!

We had the opportunity to do some hiking in Zion National Park this past weekend. The paths were muddy but the waterfalls were outstanding!

Monday:
Breakfast- Yogurt and Granola
Dinner- Curried Chicken Tenders (I use this marinade) and green salad with yellow rice for the family

Tuesday:
Breakfast- Scrambled eggs and Oranges
Dinner- Pizza

Wednesday:
Breakfast- Crustless Quiche with spinach and sun dried tomatoes
Dinner- Scout Dinner
Prep- bake pumpkin, thaw ground beef

Thursday:
Breakfast- Pumpkin Pancakes with honey
Dinner- Meatloaf with Green Beans and Mashed Potatoes and Gravy for the Family
Prep- thaw steaks

Friday:
Breakfast- Yogurt Sundae
Dinner- Steaks, baked potatoes and steamed broccoli
Prep- thaw chicken

Saturday:
Breakfast- Bacon and Eggs
Dinner- Oriental Chicken Lettuce Wraps
Prep- thaw ground beef

Sunday:
Breakfast- Veggie Omelet
Dinner- Taco Salad and Tacos for the Family

Treats: Mrs. Ed's 'Nana Bread, Triple Berry Cobbler (recipe pending)

I took this photo driving home a few days ago. I love the pink in the Winter sunsets here, it is so striking against the white snow. There are some repeats on the menu this week, we had some things come up last week and I wasn't able to stick to the menu I had planned and I need to use up the ingredients I purchased.

Monday:

Dinner-Ina's Pesto Baked Salmon and Chicken Tenders for those who won't eat salmon, sliced tomatoes, squash and roasted potatoes for the family

Here is my menu post for the week. I do not plan lunch because I usually have leftovers or a salad. My family is very much in the habit of having meat at meals and I would like to see us eat less of it. I am beginning with having one night a week be vegetarian night, this week it is Thursday.

Monday:
Breakfast- Pumpkin Muffins, yogurt and fruit dip (recipe pending)
Dinner- Buffalo Burgers (recipe review pending) with homemade fries for the family

Tuesday:
Breakfast- Refreshing Morning Smoothie
Dinner- Turkey Soup (leftover turkey meat from Sunday), Creamy Butternut Squash and pumpkin muffins

Wednesday:
Breakfast- Egg Scramble with Spinach and Tomatoes
Dinner-Sausage with peppers and potatoes for the family

Thursday:
Breakfast- Pumpkin Pancakes
Dinner- Vegetarian Night, Spaghetti Squash with Marinara Sauce (made without the meat of course)

Friday:
Breakfast- honey sweetened yogurt with fresh fruit and pecan nibbles
Dinner- Meatloaf with salad (new dressing recipe to try) and mashed potatoes and gravy for the family

Saturday:
Breakfast- Grain Free Chocolate muffins
Dinner- Ina's Pesto Baked Salmon, Chicken tenders (for those who won't eat salmon), sliced tomatoes, seasoned rice for the family.

Sunday:
Breakfast- Chocolate Muffin and an egg
Dinner- Ham, huge green salad, oven roasted potatoes for the family and butternut squash

Snacks and Treats; carrot cake, pecan nibbles, beef jerky, chocolate chip cookies

What is burning in the photo? Our Christmas Trees. We traditionally burn them on the evening of New Year's Day, and they go up fast.

Picture of the Week and Menu 1/04/10 to 1/11/10


I absolutely love this picture. It was take on Temple Square in Salt Lake City. The floating candles around the nativity, it was so calm and pristine. Beautifully done.

Here is the menu for week #2. I usually plan breakfast and dinner and have some kind of leftovers for lunch. As you can see my family does eat grains still so I have to make adjustments with some meals.

Dinner- Pot Roast and Funeral Zucchini

Dinner- Pizza (make extra crusts to freeze)

Breakfast- Coconut Waffles with Blueberry Compote
Dinner- Fajita Salad (served with corn tortillas for the family),
Thursday
Breakfast-Pumpkin Muffins using Pumpkin Puree from my freezer
Dinner- Breakfast with bacon (scrambled eggs and pancakes)

Friday
Breakfast- Fresh fruit with whipped cream and Granola
Dinner- Meatloaf and green salad, mashed potatoes and gravy for the family

Saturday
Breakfast- chocolate muffins and fried eggs
Dinner- Egg drop soup (recipe pending) and Zucchini Oriental Noodles (rice for the family)

Sunday
Breakfast- chocolate muffins and fried eggs
Dinner- Turkey Breast in the Crock pot,

Lunch ideas- chicken sausages, salad with boiled eggs,
Desserts- Orange Cake, chocolate chip cookies

Menu for 12/21/09 to 12/27/09

I am ready to start logging menus for each week, the idea being that I can reuse them in the future. I am going to try posting a menu Sunday evening for the following week. I usually plan breakfast and dinner and have some kind of leftovers for lunch. As you can see my family does eat grains still so I have to make adjustments with some meals. Here is this week's menu:

Monday
Breakfast- Eggs Benedict with avocado
Dinner- leftover meatloaf and creamy acorn squash

Tuesday
Breakfast- Eggs Benedict with avocado
Dinner- Chicken Fajita Salad (Fajitas for the family)

Wednesday
Breakfast- Banana Pancakes with Blueberry Compote
Dinner- Chicken Parmesan with green salad and garlic mashed potatoes for the family

Thursday
Breakfast- Annual Tradition to go out as a family
Dinner- Leftover Chicken Parmesan and salad

Friday
Breakfast- scrambled eggs and bacon
Dinner- Christmas Dinner (Ham and Turkey breast, veggie tray, salsa)

Saturday
Breakfast- Coconut milk smoothie
Dinner- Christmas dinner leftovers or Thai Chicken with Spinach (add curry rice for the family)


Sunday
Breakfast- Fruit bowl with whipped cream and nuts
Dinner- Taco Salad minus the black beans (tacos for the family)

Lunch ideas- Grilled chicken sandwich, Leftover Oriental Chicken Lettuce wraps, Egg salad lettuce wraps
