Good for you Mayonnaise!
I love this mayo, I have used it in salad dressings, on sandwiches and to make turkey or chicken salad. It is all good!
Good for you Mayonnaise
Ingredients:
1 egg
1 tsp. dijon mustard
1 tsp. lemon juice
1/4 tsp. salt
2 T. Barleans flax oil
1 c. (- 2 T.) olive oil
Method:
Combine egg, mustard, lemon juice and salt in a food processor. Measure the flax oil into a 1 c. measuring cup. Fill it the rest of the way with olive oil. With food processor running slowly drizzle oil in a few drops at a time, this will take a few minutes. Continue to run the processor until all the oil is incorporated. Store in an air tight container (canning jars work great) in the refrigerator.

Karen - this mayonnaise looks wonderful. I just made Aioli for the first time - wow, very tasty but so rich! I think using the whole egg would make it lighter? Flax would also add another dimension of flavor. Thanks for sharing!
